Wake-up to a decadent and nutrient- rich Breakfast … Chia seeds – Coconut Pudding!

Chia seeds are high in fibre and they are excellent for digestion due to their gel-like consistency, as they absorb water, which helps to cleanse the system as they pass through the body. The Chia seed is super high in antioxidants, calcium, Vitamin C, iron and potassium which all provide an instant boost of health and vitality.
Breakfast needs to be considered as one of the most important meals in your day. During my consultations with clients I emphasis a lot on the importance of breakfast and how we should be starting our day. Having a healthy diet and lifestyle is crucial for a radiant skin.
Sprinkle a spoon of Chia seeds to your cereal, or better yet try this Chia-Coconut breakfast pudding to put a bounce in your step this morning!
Ingredients
1/4 cup chia seeds
1 cup low fat coconut milk
1 tsp honey
handful of fresh blueberries
1 tbs toasted silvered almonds
1 tbs toasted organic shredded coconut
Method
Combine chia seeds with the low fat coconut milk and a tsp of honey. Cover and refrigerate overnight. The chia seeds will gel. In the morning top with toasted organic coconut, slivered almonds and blueberries.
